I’m a big fan of No Recipes blog. This is a great chili powder which is a much better substitute for any store-bought version.

Guajillo chiles, ends trimmed, seeds removed, roughly chopped (3 large)15 g

Ancho chile, ends trimmed, seeds removed, roughly chopped (1 medium)10 g

Cumin seeds (1 tsp)3 g

Coriander seeds (½ tsp)1 g

01Preheat oven to 175°C / 345°F.

02Spread in a single layer on a baking sheet.

03Roast until aromatic, about . Shake pain briefly after .

04Remove from oven and allow to cool.

05Transfer to spice grinder.

Oregano, dried (½ tsp)5 g

Paprika, smoked (¼ tsp)5 g

06Add to spice grinder.

If Guajillo chilis are hard to find, you can substitute the equivalent weight in cayenne pepper, although the flavour will be slightly different.
