When making your sugar syrup (simple syrup), add lime zest and mint leaves to enhance the flavour. You can also do a pressure infusion of mint leaves and lime zest into the rum, following Dave Arnold’s technique, using 240 ml of rum with 4 g of mint leaves and 3 g of lime zest in a 1-litre (1-quart) iSi whipper and 2 cartridges of NO2.
